Side Dish: Leek Lentils

The perfect side dish: leek lentils recipe with a picture and simple step-by-step instructions.

  • 2 Rods Leek
  • 100 g Mountain lenses
  • 300 ml Vegetable broth
  • 2 tsp Dijon mustard
  • 4 tbsp Cream or herbal alternative
  • Salt pepper
  • Lemon juice
  • 0,5 bunch Parsley
  1. Cut the leek into fine rings and place with the washed lentils in a saucepan with the vegetable stock. Bring to the boil and then simmer over low to medium heat with the lid on for about 30 minutes, until the lentils are still firm to the bite.
  2. Stir in mustard and cream, bring to the boil briefly and finally season with salt, pepper and lemon juice. Finally sprinkle with the chopped parsley.

Tip:

  1. Other varieties are also suitable for this dish, e.g. red lentils, beluga lentils etc. Please note the cooking time of the lentils.
