Ingredients
 

  • 2 Pc. Eggplant
  • 1 tbsp Miso paste
  • 1 tsp Maple syrup
  • 2 tbsp Tamari soy sauce
  • 1 cm Ginger, finely chopped
  • 4 tsp Sesame

Instructions
 

  • Cut the washed aubergines in half lengthways and scratch each half with a knife in a diamond shape. Brush the surface with oil and place on a baking sheet lined with baking paper. Cook in the preheated oven at 180 degrees on the middle rack for about 25 minutes until soft.
  • In the meantime, simmer the remaining ingredients in a small saucepan with approx. 70 ml water for a few minutes. Briefly remove the aubergines after approx. 25 minutes. Brush with the creamy sauce and bake in the oven for another 5 - 10 minutes.
  • The eggplants taste great with rice or other types of grain.
