Side Dish: Miso Aubergines from Oven

The perfect side dish: miso aubergines from oven recipe with a picture and simple step-by-step instructions.

  • 2 Pc. Eggplant
  • 1 tbsp Miso paste
  • 1 tsp Maple syrup
  • 2 tbsp Tamari soy sauce
  • 1 cm Ginger, finely chopped
  • 4 tsp Sesame
  1. Cut the washed aubergines in half lengthways and scratch each half with a knife in a diamond shape. Brush the surface with oil and place on a baking sheet lined with baking paper. Cook in the preheated oven at 180 degrees on the middle rack for about 25 minutes until soft.
  2. In the meantime, simmer the remaining ingredients in a small saucepan with approx. 70 ml water for a few minutes. Briefly remove the aubergines after approx. 25 minutes. Brush with the creamy sauce and bake in the oven for another 5 – 10 minutes.
  3. The eggplants taste great with rice or other types of grain.
