- 500 g Floury potatoes
- 50 g Freshly grated Parmesan
- 1 Egg yolk
- 2 tbsp Semolina
- Salt and pepper
- Fresh thyme
- Clarified butter
- Boil the potatoes in their skins and peel them off, then press through the egg yolks, semolina, grated Parmesan, thyme, salt and pepper. Mix everything well, then form cookies out of them and fry them in clarified butter.
