Side Dish: Vegetables, Mediterranean V.2

  • 0,3 Aubergine
  • 0,5 Zucchini
  • 5 Cherry tomatoes
  • 1 kl. Onion
  • 2 Garlic cloves
  • Thyme
  • Rosemary
  • Porcini mushroom powder
  • 50 ml Beef broth, own
  • Salt
  • Black pepper from the mill
  • Olive oil
  1. Roughly dice the eggplant, courgette and onion, quarter and core the tomatoes. Finely chop the garlic.
  2. Briefly toast everything except for the tomatoes in olive oil.
  3. Add the stock and season well. Now simmer gently for about 10 minutes.
  4. Add tomatoes and stew for another 5 minutes. This time, however, open so that the broth can largely evaporate.
  5. It was served with crispy fried chicken wings and a baguette.
