- 0,3 Aubergine
- 0,5 Zucchini
- 5 Cherry tomatoes
- 1 kl. Onion
- 2 Garlic cloves
- Thyme
- Rosemary
- Porcini mushroom powder
- 50 ml Beef broth, own
- Salt
- Black pepper from the mill
- Olive oil
- Roughly dice the eggplant, courgette and onion, quarter and core the tomatoes. Finely chop the garlic.
- Briefly toast everything except for the tomatoes in olive oil.
- Add the stock and season well. Now simmer gently for about 10 minutes.
- Add tomatoes and stew for another 5 minutes. This time, however, open so that the broth can largely evaporate.
- It was served with crispy fried chicken wings and a baguette.
