Side Dishes: Spiced Potatoes My Way

  • 4 size Waxy potatoes
  • Sunflower oil
  • 1 size Cut onion
  • 1 toe Chopped garlic
  • 10 stem Fresh smooth parsley
  • 1 handful Rosemary needles chopped
  • Vegetable broth to season
  • Salt and pepper
  1. Peel, wash and dice the potatoes.
  2. Peel the onion and garlic and cut into small pieces.
  3. Heat the oil in a pan, add the onions and garlic. Then add the potato cubes and sear them, not too fast or too hot.
  4. Season with vegetable stock or salt and pepper and braise well.
  5. Chop the rosemary needles and the parsley and add them shortly before the end of the roast …..
  6. We also had minced vegetables from the day before, which went very well with it.
