Ingredients for 6 servings:
- 1 pack of triangular dough sheets (yufka or filo dough)
- 1 Feta cheese (Turkish, has a slightly stronger taste)
- 1 large onion(s), grated or finely chopped
- ½ bunch parsley, finely chopped
- 1 egg(s)
- salt and pepper
- 6 tomatoes, dried, soaked, chopped
- Water for soaking
- Sunflower oil for frying
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
with feta cheese and tomato filling
If the filo pastry is frozen, remove it from the refrigerator, cut open the package, and cover it with a damp kitchen towel. In the meantime, crumble the feta cheese into a bowl, add the remaining ingredients, and mix well. Season with salt and pepper. Spread the thawed filo pastry out on a board, pointing upwards. Add 1-2 tablespoons of filling to the bottom edge. Spread it out slightly lengthwise, fold in the left and right edges, and roll the dough up from the bottom to the point. Moisten the top point with a little water and finish rolling it up. Continue in this way until all the ingredients are used up. Finally, fry all the börek in sunflower oil until they are nice and crispy brown. Remove any excess fat from the dough and serve.
