Silesian yeast cookies with jam

Ingredients for 1 servings:

  • 500 g flour
  • 250 g butter
  • 42 g yeast
  • 3 tbsp milk
  • 1 jar jam, firm
  • Powdered sugar or icing

Working time approx. 50 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 50 minutes

Cookies from my childhood

Dissolve the yeast in 3 tablespoons of milk. Stir the butter until smooth, add the flour and yeast, and knead well. Place the dough in a tea towel, tie a knot, and then place it in a bowl of cold water for about 2 hours. Then twist the water out of the dough (still in the towel). Roll out the dough thinly on a floured surface and cut into 5×5 cm rectangles. Place some firm jam in the center and press the two opposite corners together, or cut out round cookies with a glass, add jam in the center, and press the cookies together as you would for pierogi. Or choose a different shape. Place on a baking sheet lined with baking paper and bake in a preheated oven at 160°C (fan oven) for about 15-20 minutes until light golden. Dust the cookies with powdered sugar or cover with glaze. Makes about 100 cookies.
