Ingredients for 1 servings:

  • 250 g low-fat curd cheese
  • 250 g flour
  • 250 g margarine
  • 300 g jam or preserves (flavor of your choice)
  • e.g. powdered sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours

Polish quark cookies filled with jam. Yields about 50 cookies.

Knead the low-fat curd cheese, flour, and margarine into a dough, cover, and refrigerate for at least 1 hour. Roll out the dough on a floured surface until it is about 5 mm thick, and cut out 5 x 5 cm squares using a knife or pizza cutter. Place 1 teaspoon of the jam or marmalade into the center of each square, fold the opposite corners inward, and press firmly shut. Place the cookies on a baking sheet lined with baking paper. Bake in a preheated oven on the middle rack at 200°C (top/bottom heat) for about 15 minutes, until golden brown. Sprinkle the cookies with powdered sugar, if desired.
