Ingredients for 4 servings:

  • 500 g potatoes, cooked the day before
  • 125 g potato flour
  • 1 egg(s)
  • 125 ml milk, just under
  • Salt

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Peel and boil the potatoes, then press them through a potato ricer into a bowl. Cover and let stand until the next day. Then add the salt and potato flour and mix gently. Whisk the egg, add it to the potatoes, and fold it in a little. Bring the milk to a boil, then pour the boiling milk over the potato mixture. Mix everything thoroughly with a wooden spoon; the dough should easily come away from the bowl. Now form about 8 dumplings and place them in boiling salted water. Simmer gently for 12 minutes.
