Ingredients for 4 servings:
- 4 pig’s feet
- 1 pig’s ear(s)
- 1 bunch of soup vegetables
- 1 m.-sized onion(s)
- 6 peppercorns
- 6 grains of allspice
- 4 carnations
- 4 bay leaves
- Salt
- ¼ liter vinegar
- 1 liter of water
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
Wash the pig’s feet, ear, and vegetables, place in a cold pan with the remaining ingredients, and simmer gently for 2.5 hours. Then remove the meat from the broth and set the broth aside to allow the sediment to settle. Remove the meat from the pig’s feet and cut into pieces, and cut the ear into strips. Arrange both in a deep bowl. Carefully pour the broth through a sieve, allow to cool, and carefully remove any excess fat. Before using the broth, reheat it and season to taste. Pour it over the meat until it is covered, then refrigerate and allow the broth to set. Crispy fried potatoes are the best accompaniment, but jacket potatoes, boiled potatoes, or fresh black bread also taste great.
