Simple banana, lemon, almond, and chocolate muffins

Ingredients for 1 servings:

  • 2 eggs
  • 120 g sugar
  • 1 packet of vanilla sugar
  • 1 pack lemon peel, grated
  • 2 tbsp lemon juice
  • 80 g oil
  • 3 m.-sized banana(s)
  • 2 tbsp milk
  • 190 g flour
  • 1 ½ tsp baking powder
  • 2 tbsp chocolate shavings
  • 3 tbsp almonds, ground

Instructions

Working time approx. 12 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 37 minutes

Beat the eggs in a mixing bowl. Combine the sugar, vanilla sugar, lemon zest, and lemon juice and mix with the eggs. Then add the oil and continue mixing. Mash the bananas with a fork and add to the mixture. Add the milk and mix everything again. Combine the flour, baking powder, chocolate shavings, and ground almonds and add to the mixture. Mix everything with a mixer until a batter forms. Preheat the oven to 180°C (top/bottom heat). Divide the batter among 15 muffin cups and bake in the preheated oven for about 20-25 minutes. Let the muffins cool slightly and serve.
