Simple bean and nut roast

Ingredients for 4 servings:

  • 2 tsp oil, sunflower oil
  • 1 onion(s), diced
  • 225 g beans or other pulses, cooked or from the can
  • 100 g nuts, mixed, chopped
  • 2 eggs, whisked
  • 1 tsp yeast extract
  • ½ tsp marjoram, chopped
  • ½ tsp sage, chopped
  • Salt and pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Simple Bean & Nut Roast – Vegetarian

Heat the oil and fry the onions for 3 minutes, stirring occasionally. Mash the beans and mix with the onions and the remaining ingredients. Transfer to a small, well-greased loaf pan and bake in a preheated oven at 190 degrees Celsius for about 30 minutes. Let cool slightly, then turn out and serve instead of meat.
