Simple buttermilk bread

Ingredients for 1 servings:

  • 500 g wheat flour, 550
  • 500 g wheat flour, 1050
  • 1 tbsp salt
  • 1 tsp sugar
  • 1 cube of yeast, or 2 sachets of dry yeast
  • 500 g buttermilk
  • 350 ml water or milk

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Combine flour and salt in a mixing bowl, mix, dissolve the yeast in the sugar (or add the dried yeast), add the buttermilk and water/milk, and knead in a food processor for about 10 minutes until a smooth dough forms. Let it rise for about 90 minutes, shape it into a loaf, cut it diagonally, and place it in an oven preheated to 250°C. Spray water on the oven walls, reduce the heat to 200°C, and bake for 40 minutes. Half the yeast, chilled overnight, gives the bread a slightly more intense flavor. As above, the buttermilk gives it a delicate, tart flavor.
