Ingredients for 3 servings:
- 700 g flour (wheat flour 550)
- 300 g semolina (durum wheat semolina)
- 24 g sea salt
- 16 g yeast
- 600 ml water, cold
- 25 ml extra virgin olive oil
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Mix all ingredients together and knead until the dough starts to pull away from the edges (approx. 10 minutes). You can briefly dissolve the yeast in 100 ml of lukewarm water (from the 600 ml) and then mix it in. Let the dough rest for at least 30 minutes and then divide it into three equal loaves. After another 30 minutes of resting, shape the loaves and place them on a baking tray lined with baking paper. Let them rest for another 30 minutes. Cut the loaves diagonally several times with a sharp knife. Place the baking tray with the loaves in the oven preheated to 230°C and place a dish with 200 to 300 ml of water on the bottom of the oven. After approx. 10 minutes, briefly open the oven door and reduce the temperature to 210°C. After approx. 20 minutes the loaves are ready to bake.
