Simple ham, cheese and leek quiche

Ingredients for 1 servings:

  • 250 g flour
  • 140 g butter, very soft
  • 1 stalk(s) leek
  • 200 g ham, cooked
  • 300 g cheese, grated pizza cheese
  • 450 g sour cream
  • 4 m.-sized eggs
  • 4 tbsp flour
  • salt and pepper
  • Paprika powder
  • Nutmeg (ground)

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 35 minutes

First, quickly knead the flour with 1/2 teaspoon of salt, the butter, and 5 tablespoons of ice-cold water to form a smooth dough. Form it into a ball, wrap it in plastic wrap, and chill for about 30 minutes. Finely slice the leek and finely dice the ham. Mix the sour cream with the eggs and flour and season with salt, pepper, paprika, and nutmeg. Now add the leek, ham, and grated cheese and mix everything well. Carefully line the bottom and sides of a greased quiche dish (or a 28cm springform pan) with the dough and pierce it several times with a fork. Spread the topping on top and bake in a preheated oven at 180°C for about 45-50 minutes until golden brown. Check for browning and, if necessary, reduce the heat slightly towards the end of the baking time. Allow to cool slightly and serve lukewarm.
