Simple Kölsch bread

Ingredients for 1 servings:

  • 480 g wholemeal spelt flour
  • 120 g wholemeal rye flour
  • 60 g flaxseed, optional
  • 60 g sesame seeds, optional
  • 18 g baking soda
  • 12 g salt
  • 660 ml Kölsch or another beer
  • 12 g balsamic vinegar, light or another vinegar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 55 minutes

Mix the dry ingredients thoroughly. Stir in the beer and vinegar and mix well. The batter will be quite runny. Pour the batter into a silicone or parchment-lined baking pan. I used a 30 cm loaf pan for the bread. Bake the bread in the center of an unheated oven at 220°C (top/bottom heat) for 40 minutes. Then remove the bread from the baking pan and leave it in the switched-off oven for at least another 10 minutes. This recipe came about because there was some leftover Kölsch beer from a party, and no one in the house drinks beer.
