- 310 g wheat flour type 405
- 180 g water
- 10 g salt
- 4 g fresh yeast
- some oil for the bowl
- Flour for the work surface
Instructions
Working time approx. 10 minutes; Rest time approx. 10 hours; Total time approx. 10 hours 10 minutes
Dissolve the yeast in the water. Knead the flour and yeast water for 5 minutes. Then add the salt and knead for another 5 minutes. Place the dough in a lightly oiled bowl and let it rise, covered, at room temperature for 10 hours. Further preparation of the dough: This dough is enough for 2 pizzas. Place the dough on a floured surface and cut it in half with a knife. Press it into a round shape with floured hands, then carefully shape it from the inside out until the pizza reaches the desired size. Top and bake in the preheated oven at the highest temperature for about 10 minutes, or longer depending on the oven and temperature.
