Simple speculatius cake

Ingredients for 1 servings:

  • 250 g speculatius biscuits
  • 100 g margarine
  • 500 g mascarpone
  • 500 g quark
  • 4 tbsp honey
  • 1 tbsp cinnamon
  • 200 g sugar
  • 8 sheets of gelatin
  • 250 g cream
  • Cocoa powder, for dusting

Working time approx. 30 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 30 minutes

without baking and many ingredients – simple but very delicious

Crumble the speculatius biscuits and melt the margarine. Mix both and press into a 28 cm springform pan. Soften the gelatin in cold water. Whip the cream until stiff. Mix all the other ingredients together and add the dissolved gelatin to the mixture. Fold in the cream. Pour the mixture onto the base and let it set in the refrigerator, preferably overnight. Dust with cocoa powder.
