Ingredients for 1 servings:
- 500 g spelt flour, type 630
- 1 cube of yeast, fresh
- 2 tsp honey, liquid
- 300 ml water, lukewarm
- ½ tsp salt
- some butter for the mold
Instructions
Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes
for 1 loaf pan of 26 cm
Add the water, salt, and honey to the mixing bowl. Add the spelt flour and crumble the yeast over it. Knead the dough with a food processor until it comes away from the bowl. If the dough is too stiff, add more water; if it’s too mushy, add a little more flour. Cover the dough and let it rise for 30 minutes. Caution: The dough must not dry out! Then knead the dough vigorously with your hands and place it in the greased pan. Let it rise for another 15 minutes. Brush the surface of the dough with water to prevent it from drying out and place the pan in a cold oven. Bake at 200°C for about 35 minutes, then let it stand in the switched-off oven for another 10 minutes. Remove from the pan and spray with cold water. Let cool.
