Simple Tomato Soup According to soup Connoisseur Style
The perfect simple tomato soup according to soup connoisseur style recipe with a picture and simple step-by-step instructions.
- 1 small Onion
- 1 Bit Garlic
- 1 pole Celeriac
- 1 pole Tomato paste
- 1 pole Olive oil
- 1 pole White wine
- 500 ml Tomatoes happened
- 200 ml Vegetable broth ….. link see below …..
- 4 piece Sage leaves dried
- 4 piece Black pepper from the mill
- 2 piece Tomatoes pickled in oil
- 2 piece Sugar
- 100 ml Cream
- 100 ml Oregano
- 100 ml Spring onion
- Peel the onion and garlic and cut very finely. Peel the celery, cut a few times lengthways and then dice very finely and then sweat everything well in a little olive oil. Then add the tomato paste and roast a little.
- Now deglaze the whole thing with the wine and fill up with the tomatoes and the hot vegetable stock. Season with a little oregano, pepper and a pinch of sugar and cover and simmer for a good 15 minutes on a low heat.
- Cut a few oregano leaves very finely, whip the cream a little and then fold in the leaves. Cut a few thin slices from the spring onion as a decoration. Chop the pickled tomatoes and add them to the soup.
- Season the finished soup to taste again, put it in a soup bowl, garnish with the whipped cream and the spring onion, served with roasted baquette slices ….. enjoy your meal …..
