Ingredients for 1 servings:

  • 3 tomatoes
  • 3 slice(s) roast turkey, ready cooked
  • 4 tsp mustard (honey)
  • 1 pointed pepper, red
  • 1 thin spring onion(s)
  • 2 eggs
  • Fat, for the pan
  • Salt
  • black pepper, freshly ground
  • chili flakes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Roast turkey on tomato slices under a fried egg with pepper and leek cubes

Slice the tomatoes, place them on a larger plate, and season. Place the roast slices on top of the tomatoes and spread each slice with 1 teaspoon of mustard. Finely dice and chop the bell peppers and spring onions, and sprinkle half over the roast slices. Heat some fat in a pan, fry two fried eggs, place them over the diced vegetables, and season. Sprinkle the remaining diced vegetables on top and add the last teaspoon of mustard to the edge of the plate—delicious!
