Ingredients for 4 servings:
- 1 kg potatoes, cooked from the previous day
- 8 sausages, Franconian, fried
- 4 onions
- 2 garlic cloves
- Marjoram, shredded
- Caraway seeds
- Salt and pepper, from the mill
- Clarified butter, for frying
- 1 tbsp chives, cut into rolls

delicious dish to use up leftovers!
Peel the boiled potatoes and onions, then slice both. Peel and chop the garlic, and slice the sausages into thin slices. Heat the clarified butter in a non-stick pan. Add the onions, potatoes, and garlic to the pan one after the other and fry until the potatoes are golden brown and slightly crispy. Then add the sausage slices to the pan and fry for 5 minutes. Season the sausage hash with salt, pepper, caraway, and marjoram, sprinkle with chives, and serve with a cucumber or tomato salad.
