Sliced beef with Chanterelles
The perfect sliced beef with chanterelles recipe with a picture and simple step-by-step instructions.
- 1 smaller Kohlrabi fresh
- 4 tbsp Oil
- 1 Onion red
- 150 g Fresh chanterelles
- 0,5 bunch Marjoram fresh
- 250 g Rumpsteak
- 2 tbsp Creme fraiche Cheese
- Salt and pepper
- 50 ml White wine
- 150 ml Meat broth (cubes)
- 2 tsp Sauce binder light
- 2 tbsp Water
- Peel the kohlrabi and cut into 5 cm cubes. Sauté in a saucepan with 1 tablespoon of oil and add about 2 tablespoons of water, season with salt and cover with a low heat and let simmer for about 10 minutes.
- In the meantime, clean the chanterelles, cut the onion into strips. Roughly chop the majora. Cut the meat crosswise into strips.
- 2El oil in a pan, fry the meat all over over high heat. Season with salt and pepper. Place the meat on a plate. Roast onions and chanterelles with 1 tablespoon of oil for about 1 minute. Deglaze with white wine and reduce almost completely. Pour in the stock and heat. Thicken with a sauce thickener. Mix in the meat and kohlrabi and heat. Stir in the creme fraiche.
- Season the strips with salt and pepper. Serve sprinkled with marjoram. Rösti corners go very well with this.
