  • 500 g pork schnitzel
  • 100 ml rapeseed oil, good quality
  • 250 ml milk
  • 400 ml vegetable stock
  • 200 ml cream
  • nutmeg
  • 1 tbsp sauce thickener, light

Instructions

Trim the beans and cut into pieces. Cook in salted water for about 12 minutes. Drain, season to taste, and allow to drain. Peel the potatoes. Cook in salted water for about 20 minutes. Peel and finely dice the onion. Pick the thyme leaves. Halve the tomatoes. Cut the meat into strips. Heat 3 tablespoons of oil. Brown the meat. Add the onion and thyme and fry. Add the tomatoes and beans and braise for 3 minutes. Season with salt and pepper, deglaze with stock and cream, bring to a boil, and simmer for 4 minutes. Heat the milk and the remaining oil. Mash the potatoes and stir in the milk-oil mixture. Season with salt and nutmeg. Bring the strips to a boil. Stir in the sauce thickener, bring to a boil, and season with salt and pepper. Fill a piping bag with a large star nozzle with the puree and pipe 2-3 tufts onto each plate. Serve with the meat.
