Ingredients for 4 servings:

  • 1 kg pork fillet(s)
  • 1 can of beans, green, very fine, 850 ml
  • 1 jar pepper, green, pickled
  • 2 tbsp mustard
  • 150 g crème fraîche
  • n. B. Sauce thickener, dark
  • 200 ml broth
  • Salt and pepper from the mill
  • Clarified butter for frying

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 25 minutes

Cut the pork fillet into thin strips and fry in a little clarified butter until golden brown. Deglaze with the broth, season with salt and a little pepper, and simmer for about 10 minutes. Then add the mustard, peppercorns, and beans and simmer for another 10-15 minutes. Finally, stir in the crème fraîche and thicken everything with a dark sauce thickener. Croquettes, green tagliatelle, or duchess potatoes are delicious as a side dish. Baguette would also be a great accompaniment. This dish is also easy to prepare in advance (e.g., for a large celebration). Leftovers freeze perfectly.
