Ingredients for 1 servings:

  • 50 g sunflower seeds
  • 25 g wheat bran
  • 25 g flaxseed meal
  • 25 g almond slivers or chopped almonds
  • 50 g chia seeds
  • 50 g almonds, ground
  • 250 g low-fat curd cheese
  • 1 tsp, heaped baking powder or cream of tartar
  • 1 egg(s)
  • 1 egg white
  • ½ tsp, leveled salt

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Mix the dry ingredients together, then gradually add the remaining ingredients and knead well into a dough. Preheat the oven to 200 degrees Celsius. Let the dough rise in the bowl for about 15 minutes; it will then firm up. Form a loaf of bread, place it on a baking sheet lined with baking paper, and top with nuts, if desired, pressing them down. Bake the dough for about 40 minutes at 200 degrees Celsius. You can use various types of nuts, depending on your taste. The bread will keep in the refrigerator for at least a week. It tastes best fresh or lightly toasted.
