Ingredients for 40 servings:
- 30 g yeast, fresh
- 1 tsp sugar
- 250 ml water, lukewarm
- 430 g flour
- 2 tbsp oil
- 2 eggs
- Salt
- sesame
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Dissolve the yeast in a mixing bowl with the sugar in lukewarm water. Add the flour, 1 teaspoon of salt, and the oil and knead everything into a smooth dough. Cover and let rise in a warm place for about 30 minutes. Meanwhile, whisk the eggs in a small bowl. Preheat the oven to 250°C. Knead the dough again and form it into rolls about 4 cm thick. Cut the rolls crosswise into 40 slices and shape them into round rolls with your hands. Place the rolls on a baking sheet lined with baking paper, brush with the beaten egg, and sprinkle with sesame seeds. Bake in the oven for 8 minutes until crispy. Cut the rolls open and top with chopped egg, mayonnaise, and chives, raw ham and diced cucumber, salmon and horseradish, crab, and crème fraîche, as desired.
