Small plum sponge cake

Ingredients for 1 servings:

  • 60 g butter or margarine
  • 45 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 m.-sized eggs
  • 100 g flour
  • 1 tsp, leveled baking powder
  • 1 tbsp milk
  • 200 g plum(s)
  • 1 tsp cinnamon sugar
  • n. B. almond sticks

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

For an 18cm springform pan

Cream the butter until fluffy, add the sugar, vanilla sugar, and a small pinch of salt, and continue beating. Add the eggs and beat. Combine the flour and baking powder and stir into the batter. Finally, add the milk. If using large eggs, omit the milk. Wash, halve, and pit the plums. Pour the batter into a greased 18cm springform pan. Arrange the plum halves on top, cut-side up. If desired, add slivered almonds. Sprinkle with cinnamon sugar. Bake in the oven at 160°C (fan oven) for about 45 minutes.
