Smoked salmon muffins with dill

Ingredients for 1 servings:

  • 280 g flour
  • 3 tsp baking powder
  • salt and pepper
  • 2 large eggs
  • 250 ml buttermilk
  • 6 tbsp oil (rapeseed oil)
  • 150 g smoked salmon
  • 2 tbsp dill, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Preheat oven to 180°C. Grease a muffin tin or line with paper baking cups. Cut the smoked salmon into thin strips. Combine flour, baking powder, dill, salt, and pepper in a bowl. Mix the eggs, buttermilk, and oil. Add the wet ingredients to the flour mixture and stir in. Add the salmon. Mix everything into a smooth batter and divide it between the muffin tins. Bake for about 20 minutes. Best served warm. They also taste great cold.
