Smoked turkey thigh with new potatoes

Ingredients for 4 servings:

  • 1 ½ kg leg(s) (turkey thigh), smoked
  • 4 sprigs rosemary
  • 500 ml beer (dark beer)
  • 15 small potatoes, new
  • Black pepper, coarsely ground
  • 2 tbsp flour
  • some water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180°C (top/bottom heat). Make a cross-shaped cut in the rind of the smoked thigh and season with pepper. Place rind-side down in a casserole dish and simmer with the lid closed for about 20 minutes. Then turn over, add the rosemary sprigs and simmer for a further 90 minutes, turning several times. When the meat has braised gently on all sides, add the beer. Brush the new potatoes and add them. Cook for a further 40 minutes. Season the sauce to taste and add more salt if necessary. Whisk the flour with a little water. Stir into the sauce and allow to thicken slightly. Arrange on plates and serve. Tips: You can also add small cubes of skinned tomatoes to the sauce shortly before the end of the cooking time, or even a dash of cream.
