Black salsify casserole

Ingredients for 4 servings:

  • 1 kg salsify(s), already prepared
  • 2 tbsp lemon juice
  • 1 tsp butter
  • 450 g leaf spinach (frozen)
  • 150 g crème fraîche
  • 250 ml vegetable stock
  • 2 eggs
  • 100 g cheese (Gouda), grated
  • 3 tbsp sesame seeds
  • herb salt and pepper
  • Nutmeg, grated
  • possibly garlic and herbs

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Add the unthawed salsify to boiling salted water with 1 tablespoon of lemon juice, bring back to a boil, and cook uncovered for 7-8 minutes. Then drain in a sieve. Butter a casserole dish and add the salsify. Thaw the leaf spinach with a little water over medium heat and reduce the water. Season with herb salt, pepper, and nutmeg and pour over the salsify. Mix the crème fraîche, eggs, vegetable stock, and 1 tablespoon of lemon juice, then pour over the spinach and salsify. Grate the Gouda cheese, mix with the sesame seeds, and sprinkle over the casserole. Bake in a preheated oven at 200°C (top/bottom heat), 175°C (fan oven), or gas mark 3 for about 20 minutes until crispy brown. Garnish with herbs, if desired. Add 1-2 cloves of garlic to the leaf spinach, if desired.
