Diverse salsify
Briefly sauté the garlic and chili in hot oil, then add the curry paste and sauté briefly. Deglaze with the stock and add the salsify, cut into 3-4 cm pieces. After about 8-10 minutes, when the salsify shouldn’t get too soft, add the soy and fish sauce. Pour in the cream and season with salt and pepper. Let the sauce simmer on low heat. Just before serving, stir in the parsley. This dish goes well with a salmon fillet, for example. Tip: Add fresh coriander for an even more sophisticated flavor.
