Smokey's dried bean salad

Ingredients for 2 servings:

  • 100 g dried beans
  • 1 tbsp butter
  • 1 small onion(s)
  • 2 clove(s) garlic, chopped
  • 300 ml broth
  • ½ bunch parsley, chopped
  • 100 g bacon cubes, fried without fat
  • 50 g walnuts
  • 5 tbsp vinegar
  • 4 tbsp rapeseed oil
  • 50 ml broth
  • 1 tsp mustard
  • some chili, finely chopped
  • n. B. Pepper, from the mill
  • n. B. Salt

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 40 minutes

Soak the dried beans in cold water overnight. Drain and let them drain well. Heat the butter in a saucepan, sauté the onions and garlic. Reduce the heat and add the beans. Pour in the stock, cover, and simmer for about 1 hour. Stir occasionally and add a little more stock if necessary. When the beans are tender, transfer them to a bowl and add the dressing. Mix everything well and let it stand for about 30 minutes. Before serving, stir in the parsley and sprinkle with the bacon bits and walnuts.
