Ingredients for 2 servings:

  • 2 slices of bread
  • 2 beefsteak tomatoes
  • 2 slices of Gouda
  • 2 eggs
  • salt and pepper
  • Tomato ketchup
  • Asian sauce, sweet and sour

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

First, slice the tomatoes. Season with salt and pepper in a pan and fry briefly over medium heat. Turn once, then divide into two portions in the pan. Place the Gouda cheese on top of the tomatoes and let it melt. In the meantime, spread the bread with a mixture of ketchup and the sweet and sour sauce. If you like, you can toast the bread briefly beforehand or use toast bread straight away. Once the cheese has melted, pour the tomato and cheese mixture onto the bread. Add a little fat to the hot pan and carefully crack the eggs into it, making sure the yolks remain intact. Season with salt and pepper, and when the egg whites are firm, flip them briefly. Finally, crack the eggs onto the bread. Tip: Serve with a crisp leaf salad with spring onions and cherry tomatoes!
