Ingredients for 4 servings:

  • 800 g bratwurst – mass
  • 2 onions, finely chopped
  • 3 eggs
  • salt and pepper
  • 1 tbsp marjoram
  • 1 tbsp paprika powder, sweet
  • 1 bunch parsley, chopped
  • 3 leeks, cut into cm-sized pieces
  • 2 tbsp butter
  • 2 tbsp flour
  • ¼ liter of milk
  • nutmeg
  • 2 egg yolks
  • 3 tbsp cheese, grated Emmental

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Mix the sausage mixture with the diced onion and eggs. Season with salt, pepper, marjoram, and paprika, and knead in the chopped parsley. Grease an ovenproof dish and press the sausage meat into the dish to create a 2cm-high rim. Place the dish in the oven and bake at 180°C for 20 minutes. Briefly sauté the leek in salted water until soft, then drain and set aside. Melt the butter, stir in the flour, and add the milk while stirring. Bring to a boil once and season with nutmeg and salt. Stir in the beaten egg yolk and 3/4 of the cheese, then mix with the leek. Spread over the pre-baked dough. Sprinkle with the remaining cheese and return to the oven for another 10 minutes. This is a recipe from the 70s, but it still tastes great today.
