Snack with Amaranth and Cranberries

The perfect snack with amaranth and cranberries recipe with a picture and simple step-by-step instructions.

  • 50 g Cocoa butter
  • 65 g Puffed amaranth
  • 2 tbsp Unsweetened cocoa
  • 100 g Dried cranberries
  • Agave syrup to your own taste
  1. Melt the cocoa butter in a bowl over a hot water bath. Add the amaranth, cocoa and cranberries and mix everything well. Sweeten with agave syrup according to your own taste.
  2. Line a larger board with cling film. This should be twice as big (long) as the board. Now put the mixture on top, plate in a rectangular shape approx. 2 – 5 cm thick, straighten the edges and press everything down well. It is a bit fragile at first, but if it is squeezed firmly it will result in a plate. Carefully cut this into small rectangular portions, place the film firmly lengthways over the plate and fold it up and over the plate around the edges – also firmly. Then put everything including the board in the refrigerator. When the plate has set (may take 2 hours), remove the film and cut the cut marks properly. This is how you get small, healthy “bites” that you can eat without regrets when you are craving sweets …………..
  3. The above number of people refers to a 30 x 20 cm large and 2 cm thick plate. How many servings you can nibble on depends on your cravings ……… ;-)))
