Ingredients for 1 servings:

  • 130 g sugar
  • 100 g cane sugar
  • 240 g vegetable margarine
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 tsp applesauce
  • 280 g flour
  • 2 tsp baking powder
  • 200 g chocolate, vegan and/or nuts, raisins…

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 52 minutes

vegan and easy, makes about 24 cookies

Preheat the oven to 200°C (fan assisted oven). Beat the margarine with both types of sugar, vanilla sugar, and salt until fluffy. Add the applesauce and mix until creamy. Stir the flour into the mixture a spoonful at a time and finally add the baking powder. Optionally, you can give your cookies a special touch by adding other ingredients to the dough. You can do this by adding chocolate chips, nuts, or raisins to the dough. Use two spoonfuls to place walnut-sized mounds of dough on a baking sheet, but do not smooth them down. Leave enough space between the mounds to prevent the cookies from sticking together. Place the baking sheet on the middle rack of the oven. Bake the cookies for about 7 minutes, until the edges are lightly browned. Then remove the sheet from the oven and let the cookies cool. They will be very soft at first and will look overcooked, but they will harden as they cool. When the cookies are completely cool, they are done and taste best.
