Soft-boiled eggs with herb mashed potatoes

Ingredients for 2 servings:

  • 4 eggs
  • 4 m.-sized potatoes
  • ½ bunch flat-leaf parsley
  • ½ bunch chives
  • 1 handful of arugula
  • e.g. butter
  • e.g. milk
  • e.g. salt and pepper
  • n. B. Nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash and finely chop the parsley. Finely chop the chives. Wash the arugula, shake dry, and finely chop. Peel the potatoes, cut into pieces, and boil in salted water for 15-20 minutes. Pierce the eggs and boil in salted water for 8 minutes. Then remove them, refresh them under cold running water for 1 minute, and set them aside. When the potatoes are soft, drain them, mash them, and mix them with the herbs, a little butter, and a little milk. Season with salt, pepper, and nutmeg. Peel the eggs, halve them, and serve with the mashed potatoes.
