Sole Eggs with Mustard Dressing

- 750 ml Water
- 1 pcs. Onions quartered with peel
- 1 teaspoon Caraway seeds
- 2 Pc. Bay leaves
- 1 teaspoon Juniper berries
- 55 g Salt
- 2 teaspoon Black peppercorns
- 6 teaspoon Mustard medium hot
- 2 Pinches Ground pepper
- 1,5 teaspoon Wine vinegar
- Beat hard-boiled eggs all around so that the shell is well broken, put in a large glass or other container with a lid. Boil the water with the onions, caraway seeds, bay leaves, juniper berries and the salt for about 10-15 minutes and then add to the eggs in the glass. Let it steep for about 4-7 days. For the mustard dressing, mix the mustard with the wine vinegar and the pepper. Halve the eggs, carefully remove the yolk and add some of the dressing to the egg, put the yolks back in. It is best to put it in your mouth all at once and then a clear one afterwards.
