Soup dumplings very fine

Ingredients for 4 servings:

  • 1 egg(s)
  • 50 ml milk
  • some vegetable broth
  • Fresh herbs (parsley, chives)
  • 90 g breadcrumbs

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the egg with the milk, add the vegetable stock and the finely chopped herbs. Then I gradually add the breadcrumbs until a mushy mixture forms. The dough shouldn’t be too thick. I then form it into small dumplings, which I then add to the hot soup. The dumplings are ready when they float to the surface. These dumplings taste great in clear soups.
