Ingredients for 3 servings:
- 1 liter of milk
- 3 eggs, separated
- 1 vanilla pod(s)
- 3 tbsp sugar
- 2 tbsp rice

sweet milk soup with rice
Beat the egg whites in a deep bowl until stiff peaks form. Slowly add the sugar. In a cup, whisk the egg yolks until frothy. Bring the milk to a boil with the vanilla pod and the washed rice. Using a spoon, scoop out small “snow mountains” from the egg whites, place them on the boiling milk, and turn them over with a fork. Then place the finished “snow mountains” on the prepared plates. Now pour the egg yolks into the milk and stir well again. Serve the soup on plates with the “snow mountains” on top. The soup can be eaten hot or cold. It’s important that everyone gets as many “snow mountains” as possible. Tip: I usually use more rice to ensure everyone is really full. However, the original recipe only calls for 2 tablespoons of rice.
