Soup with dried wild mushrooms and cream topping

Ingredients for 6 servings:

  • 20 g mushrooms (dried wild mushrooms), soak for about 1/2 hour
  • 1 liter meat broth, homemade
  • 60 ml Sherry, dry
  • 2 bay leaves
  • Salt and pepper, to taste
  • 1 cup cream, whipped until stiff
  • 1 bunch of chives, finely chopped
  • 3 juniper berries
  • 2 carnations
  • Pepper, whole

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Simmer the meat broth with the spices for about 45 minutes. Remove the spices. Stir the mushrooms and their soaking water into the broth. Simmer for at least another 30 minutes. Season the soup with salt and pepper. Serve in a soup bowl with a dollop of cream and sprinkle with chives.
