Soup with Kvass

The perfect soup with kvass recipe with a picture and simple step-by-step instructions.

  • 3 l Water
  • 250 g Smoked bacon
  • 300 g Ribs
  • 3 piece Garlic cloves
  • 2 tbsp Dried porcini mushrooms
  • 1 piece Bay leaf
  • 1 pinch Pimento
  • 1 pinch Salt and pepper
  • 500 g Potatoes
  • 300 g Polish sausage
  • 200 g Sour cream
  • 1 bunch Parsely
  • 1 packet Kvass (sour flour essence)
  1. For the soup, first fill a saucepan with approx. 3 liters of water and bring to the boil with the bacon, ribs, bay leaf, allspice, garlic cloves, mushrooms and a little salt and pepper.
  1. Now peel the potatoes and cut into bite-sized cubes like the sausage. After about 20 minutes, the potato cubes are added to the soup like the sausage cubes. Then add some of the kvass to the soup.
  1. The soup simmer for another 15-20 minutes, until the potato cubes are cooked through, but not too soft. To serve, put the soup in the plates and serve with a dollop of sour cream and chopped parsley.
