Ingredients for 5 servings:

  • 800 g carrot(s)
  • 120 g fresh ginger
  • 100 g butter
  • 2 tbsp sugar
  • 1.2 liters of vegetable broth
  • 300 ml coconut milk
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Peel the carrots and slice thinly. Peel the ginger and dice very finely so that no fibers remain after puréeing. Sauté the carrots and ginger in butter, then sprinkle with sugar and let it caramelize slightly. Deglaze with broth and coconut milk and bring to a boil. Simmer the soup over medium heat for about 20 minutes, then puree with an immersion blender. Season with salt and pepper.
