Ingredients for 5 servings:

  • 500 g mascarpone
  • 80 g powdered sugar
  • 200 g ladyfingers
  • 4 egg yolks
  • 2 egg whites
  • 3 cup(s) espresso, freshly brewed, cooled
  • 3 cl coffee liqueur or Amaretto
  • n. B. Cocoa powder, unsweetened, for dusting

Working time approx. 35 minutes; Rest time approx. 9 hours; Total time approx. 9 hours 35 minutes

Beat the egg yolks with the sugar until fluffy. Beat the egg whites until stiff. Add the mascarpone to the egg yolk and sugar mixture and stir in slowly, but not too vigorously, or it will become runny. Then fold in the egg whites by hand or with a whisk. Chill the cream. Meanwhile, prepare a baking dish. Dip the sponge fingers, sugar-side down, into the coffee and place them in the baking dish, ensuring the entire bottom is covered. Spread the first layer of mascarpone cream on top. Alternate layers of sponge fingers and mascarpone cream in the dish, then top with cream. Refrigerate the dish for at least 8 hours until everything is nicely incorporated. Sprinkle with cocoa powder before serving.
