Soups: Banana Soup

  • 1 piece Fresh onion
  • 20 g Butter
  • 300 ml Vegetable broth *
  • 100 ml Milk
  • 100 ml Cream 30% fat
  • 2 piece Bananas, ripe
  • 2 teaspoon Yellow curry powder
  • 2 tablespoon Maple syrup
  • Salt and pepper
  • Fresh herbs
  1. Peel and dice the onion. Heat the butter in a saucepan and sauté the onion in it.
  2. Deglaze with vegetable stock and cook the onions for approx. 5 minutes until soft.
  3. Peel the bananas and cut into pieces. Add this to the soup and puree with the magic wand.
  4. Add the milk, cream and the spices and sweeten with maple syrup. Beat again and season with salt and pepper.
  5. Arrange on preheated plates, sprinkle with chopped herbs and serve immediately.
