- 2 size Kohlrabi fresh
- 0,5 packet Custard powder
- 1 packet Vanilla sugar
- 0,75 l Vegetable broth
- 0,5 l Milk
- Smoked salt
- Black pepper from the mill
- Chilli (cayenne pepper)
- Freshly grated nutmeg
- Ground caraway
- 1 Egg yolk ?
- Cream?
- Peel the kohlrabi and cut into small pieces on the vegetable slicer. Finely chop the young leaves In a saucepan, bring the stock and milk to the boil and cook the vegetables until soft. Remove 1/3 of the kohlrabi with a slotted spoon and set aside as an insert.
- Mix the custard powder and vanilla sugar with a little milk and stir into the cooking stock, bring to the boil briefly. Take the pot off the fire. Puree finely with the magic wand and season to taste with the spices. If you want, you can add cream and egg yolk to the soup and make it more substantial. Serve sprinkled with croutons.
