Sour cream noodles with zucchini

Ingredients for 2 servings:

  • 250 g pasta (spaghetti, spirali, tagliatelle, etc.)
  • 2 cubes of stock
  • 1 large onion(s)
  • 2 small zucchini
  • 1 garlic clove(s)
  • oil
  • 1 cup sour cream or crème fraîche
  • salt and pepper
  • 2 tbsp paprika powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Add the stock cubes to the pasta water instead of salt and cook the pasta al dente. In the meantime, peel and dice the onions and fry them in a little oil. When they start to become translucent, increase the heat to high, add the diced zucchini and finely diced garlic and fry. When the onions and zucchini have browned, deglaze the mixture with 50 to 100 ml of water, reduce the heat slightly and let the vegetables simmer until tender. Season with salt, pepper and paprika. When the water in the pan has evaporated, add the drained pasta and stir in. Then pour the cup of sour cream over everything, stir in well and season again with the spices.
