Sour lentil vegetables

Ingredients for 2 servings:

  • 375 g lentils
  • ¼ liter vegetable broth
  • 1 bunch of soup vegetables
  • Salt
  • 1 onion(s)
  • 50 g bacon, diced (streaky)
  • 2 tbsp vinegar
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Rinse the lentils and bring to a boil with the broth. Trim, wash, and finely chop the soup vegetables. Add them to the lentils with salt and simmer for about 45 minutes. Peel and dice the onion. Fry the bacon cubes in a pan and heat the onion, stirring constantly, until lightly browned. Add everything to the lentils and bring to a boil briefly. Season to taste with salt, vinegar, and sugar.
