Sour liver

Ingredients for 4 servings:

  • 400 g liver(s), e.g. pork
  • 1 tbsp butter
  • 1 tbsp flour
  • 250 ml meat broth
  • 125 ml milk
  • 1 tbsp vinegar
  • 1 tbsp lemon juice
  • 200 g crème fraîche
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the liver, dry it, and remove the “tubes.” Finely chop the liver. Make a light roux from the butter and flour. Deglaze with the meat broth. Add the milk and simmer for a few minutes. Add the lemon juice and vinegar. Stir in the crème fraîche. Bring back to a boil. Then add the liver and let it simmer over low heat for 5 minutes. Season with salt and pepper. Homemade mashed potatoes are delicious.
